Susan Ellis came to Gulf Shores after earning her business degree from the University of Alabama to attend culinary school.
After building her culinary career—and taking some time off for family—she teamed up with Scott Keel (a former minister turned IT professional) to launch Bleus Burger Food Truck in 2015.
By 2016’s end—the food truck’s popularity led them to establish their first brick-and-mortar location at Pelican Point Shopping Center.
Realizing they needed help scaling their restaurant venture effectively led them to Jonathan Langston—a friend from church who shared their passion for hospitality.
Langston brought his extensive culinary expertise inspired by his travels abroad into creating *The Galway*.
Together, they transformed what was originally planned as a wine bar into an authentic Irish pub experience where Ellis developed recipes that resonate deeply while Langston contributed innovative dish ideas alongside Keel’s operational savvy.
